Takuya (Taku) Watanabe was the founder and chef patron of Jin Paris (first sushi omakase in Paris to get a Michelin star which has retained it to date for the last 10 years).
Taku first started his career in sushi at age 19 in Sapporo.
After training at a traditional Kaiseki restaurant for 3 years, he then refined his sushi and Japanese culinary skills until he became chef patron at Jin Paris where he obtained a Michelin Star after 1 year.
Taku has held the 1* at Jin Paris for a consecutive 10 years and now has come to London to establish his new, edomae omakase located in the heart of Mayfair - Taku

Taku, the experience-led, sixteen-seat Japanese omakase restaurant in the heart of Mayfair has earned itself a Michelin star after only 4-months of opening.
This marks the second Michelin star for Chef Patron, Takuya Watanabe (Chef Taku), also of Jin, the only Michelin starred omakase restaurant in Paris.
Taku opened in November 2022 and is headed up by Chef Taku, assisted by Head Chef, Long Ng and founded by renowned London restaurateurs the Leong Family, with brothers Geoff and Lucas, co-founding the restaurant alongside their father.
Located on Mayfair’s Albemarle Street, Taku focuses on the spirit of omakase: to respectfully leave the decision with the chef. As such, a daily-changing tasting menu is prepared using only the freshest and most premium locally-sourced ingredients to take guests on a memorable dining experience.
The menu is based on seasonal produce, selecting the finest ingredients and daily catches. There are three menus, the lightest option, the Tasting Lunch menu at £130 for 16 courses; the Signature menu with 20 dishes for £280; and the Prestige menu, priced at £380 and including luxury ingredients such as caviar and truffle as well as additional courses.
In March 2023, Taku was awarded one Michelin star at the Guide's annual awards ceremony.
