Theo Clench

Born in Brighton, Theo's first job in hospitality was at the age of 14 when he worked as a waiter at Wagamama before quickly rising through the restaurant's ranks, where he went on to run the kitchen before moving to London to take the next step in his career.

Moving to London at 22, Theo's first position in the capital was at The Stafford Hotel before taking up a job at Adam Byatt's one Michelin-starred Trinity, in Clapham.

After spending some time there mastering his craft, Theo took up a position at Bonham's where he helped win one Michelin star for the restaurant within just 7 months.

Following this huge achievement, Theo took some time out travelling around Australia before later coming back to take over as head chef of the two Michelin-starred The Clove Club, before joining the one Michelin-starred Portland restaurant as their head chef.

During Covid, Theo joined London's Akoko restaurant, where he helped spearhead the restaurant cooking West African fare, starting the menu from scratch.

In August 2022, Theo left Akoko to start up his debut restaurant Cycene, located in East London's Blue Mountain School design space

In March 2023, after just 6 months, Theo was awarded one Michelin star at the Guide's annual awards ceremony.

CYcene

Cycene is the brainchild of acclaimed chef Theo Clench in collaboration with James and Christie Brown, the founders of Blue Mountain School, and has garnered a coveted Michelin star a mere six months after its grand opening. Tucked away in the trendy district of Shoreditch, this intimate 16-cover restaurant has quickly become a beacon for food enthusiasts seeking an extraordinary dining experience.

The essence of Cycene lies in its name, derived from the Old English word for "kitchen."

With a single tasting menu inspired by Theo's global travels, the restaurant encapsulates a harmonious fusion of Asian and Australasian influences.

Each dish tells a story, artfully crafted to take diners on a gastronomic voyage of discovery.

Guests are invited to indulge in the ground floor bar, where they are greeted with a tantalizing course of flavourful broth and artisan bread.

The anticipation builds as guests are guided upstairs to the main dining room, where the true essence of Cycene's vision unfolds.

The main dining room offers an elegant and immersive atmosphere, where guests can surrender to a procession of meticulously crafted dishes. From delicate sashimi creations to aromatic curries, the menu showcases Theo's expertly honed techniques and his passion for ingredients sourced from far-flung corners of the world.

Adding to the allure, Cycene offers a unique twist by serving one course directly in the kitchen itself. This intimate interaction between chef and diner allows for a behind-the-scenes glimpse into the magic that unfolds within the heart of the restaurant.

For those seeking an even more exclusive experience, Cycene's private Hearth Room beckons on Saturdays, accommodating up to six guests for a luxurious lunch affair. Nestled away from the main dining area, this hidden gem promises a personalised touch and an ambiance of utmost privacy.

With its well-deserved Michelin star, Cycene stands as a testament to the creative genius of Theo Clench and the visionary minds behind Blue Mountain School. Through a combination of culinary artistry, meticulous attention to detail, and a commitment to providing an extraordinary dining experience, Cycene has become a gastronomic haven that will undoubtedly captivate the senses and leave a lasting impression on all who enter its doors.

In March 2023, Cycene was awarded one Michelin star at the Guide's annual awards ceremony
