Tomos Parry is the chef owner of Michelin starred Brat in Shoreditch.

Originally from Anglesey, Tomos Parry did not set out to be a chef. He studied politics and history degree at University, but knew deep down that he wanted to cook professionally.

Biography

Tomos moved from Cardiff to London aged 25 and got a job at The River Café, which sparked his passion for produce. He then completed stages at The Ledbury and Noma, where he met James Knappett. The pair would later go on to open Kitchen Table at Bubbledogs together.

Tomos was fascinated by wood-fire grilling and this led him to take on the role of head chef at the unique Climpson’s Arch in Hackney. The factory space had wood fire ovens and grills, and Tomos was barbecuing most of the menu. 

Tomos was offered a job at Anglo-Spanish restaurant Kitty Fisher’s after the owners came in to eat one day. Cooking with his best friend Chris Leach, the Mayfair restaurant was also popular with celebrities like Brad Pitt and former prime minister David Cameron.

In 2016, Tomos announced that he would be leaving Kitty Fishers to pursue his own project. Working in partnership with restaurateur Ben Chapman, he opened Brat – a seafood-focused grill restaurant in Shoreditch in March 2018. Located above Smoking Goat, Brat was inspired by Basque restaurants like the ones in San Sebastian. One of the restaurant’s signature dishes is grilled whole turbot - the restaurant’s name, ‘Brat’, is an old English slang word for the fish.

Brat was quickly a hit with critics. Jay Rayner called Tomas’ food: “The edible equivalent of, say, Anthony Hopkins’s performance in The Remains of the Day”.

The restaurant was named Best Newcomer at the Harden’s London Restaurant Awards 2018 and received its first star in the Michelin Guide UK and Ireland 2019.
