Mauro Colagreco is a world-renowned argentine chef, whose nature-led philosophy and commitment to sustainability have earned him global acclaim.

In 2025, he added another milestone to his illustrious career by earning a Michelin star for Mauro Colagreco at Raffles London at The OWO, just months after the restaurant opened.

The award further cements his reputation for delivering exceptional dining experiences that blend innovation, ecology, and cultural depth.

Housed within the historic Old War Office (OWO) in Whitehall - now transformed into the opulent Raffles London - his new restaurant showcases the same biodynamic, garden-focused ethos that made his flagship restaurant Mirazur world-famous.

The OWO, a Grade II*-listed landmark once frequented by Winston Churchill and home to Britain’s military elite, has been reimagined as a luxury hotel and dining destination, making it a fitting stage for Mauro’s latest venture.

Huge success in France

Born in Argentina and trained in France under icons like Alain Passard and Alain Ducasse, Mauro opened Mirazur in Menton in 2006.

It went on to earn three Michelin stars and was crowned World’s Best Restaurant in 2019. Known for cooking in harmony with nature and the lunar calendar, Mauro’s cuisine transcends borders and traditions, rooted in deep respect for the planet.

Beyond France and London, he has established restaurants across the globe - from Ceto on the Côte d’Azur (awarded a Michelin green star) to Florie's in Palm Beach - each reflecting his sustainable

values and expressive cooking.

Upon being awarded a star in 2025, Michelin said of the restaurant: “On the ground floor of the mightily impressive Raffles hotel – which opened in 2023 and occupies The Old War Office – sits this elegant, comfortable and discreet dining room. 

“The sophisticated, technically elaborate cooking offers intriguing flavour and texture combinations, while displaying an emphasis on over 70 varieties of British fruit and vegetables –  the plant produce is always listed first on the menu. 

“The wine list is comprehensive, the pairings are well-considered and the service is pitched just right, being both structured and relaxed.”

Working as head chef at the restaurant is Leonel Aguirre, who previously worked for Mauro at Mirazur.

Outlining what Mauro’s restaurant offers, Raffles’ website explains: “Tracing a path through the English countryside and its beautiful gardens, his menu reveals more than 70 varieties of vegetable and fruit, all produced in Britain.

“With hyper-seasonality as one of his guiding lights, he sources flavourful ingredients from close by, forging warm relationships with local producers in the UK.

“Taking your seat at Mauro Colagreco at Raffles London at The OWO, it is possible to feel nature magnified all around you.

“You will discover extraordinary and sometimes unexpected flavours brought about through ethical and sustainable practices employed in growing all of the produce we choose.”
