These are the words of Martin Wishart, chef owner of the eponymous  Michelin-starred restaurant in Edinburgh, where Bruce Rennie worked at before relocating to the Cornish coast.

Bruce Rennie opened his restaurant, The Shore, in Penzance, four years ago.

His inaugural cookbook of the same name seems a fitting way to celebrate.

Because the space he has to work in is so small, and because it is nearby impossible to employ people to work year-round in such an isolated part of the country, the chef mans the kitchen alone.

He also serves customers, washes up, and spends the quieter winter months fixing the restaurant. 

The Shore is an expression of the chef's love for food, but also of his dedication to his customers, his suppliers, his staff, and last but not least, to his family. 

"They are at the heart of what I do. They are there to support and guide, to keep my feet on the floor, to understand and help, to allow me to build this dream." 

 

Recipes in the book are ordered according to six menus served at the restaurant, with an emphasis on the seasonality that dictates them.
