Courgette, Lemon & Pistachio by Lee Maycock
Serves 12

Ingredients

  • 175g Butter
  • 250g Demerara Sugar
  • 100ml Honey
  • 3 Eggs
  • 200g Self Raising Flour
  • 50g Ground Almonds
  • 50g Ground Pistachios
  • 2 tsp Baking Powder
  • 2 tsp Mixed Spice
  • 250g Grated Courgette
  • 1 Grated Apple
  • 1 Lemon Zest & Juice

Method

Melt the butter, sugar and honey then cool
Whisk the eggs with the cooled sugar mix
Fold in the flour, almonds, pistachios, baking
powder and mixed spice
Fold in courgette, apple and lemon
Bake at 160°C for 30 minutes
