Honeycomb

The one you want to use ;)

Ingredients

  • 800g sugar
  • 120g honey
  • 100g glucose
  • 10 table spoons of water
  • 40g bi carb soda

Method

1. In pan combine sugar glucose honey and water
2. On a very low heat bring to the boil stirring occasionally until all ingridients dissolve.
3. Put in the centre of stove and heat up to 141*C
4. Make sure you have your tray with baking parchment ready before next step :)
5. Quickly add your bi carb stirring in medium circular movements
6. Let it raise around 5 times the volume and transfer to the gastro tray lined with parchment paper
7. Leave to cool
8. Your honey comb is now ready
9. Make sure you DON'T put it In fridge.
