Seared scallops with couliflower puree, beignets, apple and leaves

Once they have been shucked scallops can be enjoyed pan fried, steamed or poached - Why not give the following Seared scallops recipe with cauliflower puree, beignets, apple and leaves recipe a try yourself?

Ingredients

  • Scallops
  • Couliflower
  • Granny smith apple
  • Salad leaves
  • Cream
  • Batter

Method

Batter small cauliflower florets
Slice cauliflower and julienne apple
Get a pan to flash point and add scallops
Season and turn after a few mins
Season other side add butter and lemon juice and drain
