Almond tart

a really fresh and vibrant almond tart.


  • 300g/10oz ground almonds
  • 300g/10oz unsalted butter
  • 300g/10oz caster sugar
  • 1/2tsp vanilla extract
  • 6 organic free-range eggs
  • The zest of one lemon


cream sugar and butter.
mix in everything else except eggs.
add eggs 1 at a time to mix.
bake in a blind-baked pastry case in the oven at around 180 degrees until firm.
