- 2lb sugar

- 2 (397g tins) of evaporated milk
- 200g water (1/2 tin)

Method
Place sugar, butter, milk, water and vanilla essence into a saucepan. Heat gently until fully dissolved. Rapidly boil the mixture to 114-118oc on a sugar thermometer remove from heat and allow to cool for 2-3 minutes put in a kitchen aid and beat on a medium setting till thick and becomes rough in texture. place in tray and leave to set in fridge.
