Brother David baked in Cartmel Crusader Ale Crust with Pickled Onions

Starter cooked by 2013 Cumbria Chef of the Year Daniel Akrigg

Ingredients

  • 200g Brother David Cheese
  • 120g Rye flour
  • 120g Plain flour
  • 350ml Crusader Ale
  • 4 Baby onions
  • 4 Baby leeks
  • 120ml malt vinegar
  • 30g sugar
  • 12g salt

Method

Make a bread dough, and prove.
Cut cheese in two for each person, knock back bread, wrap around cheese. Set in fridge.
Bring vinegar, salt, sugar to boil, add peeled onions, cook until soft allow to cool in liquid.
Bake cheese for 8 mins, grill leeks and serve
