caramelised vinegar jus

lovely with duck, pork or game.

Ingredients

  • 4 tbsp golden caster sugar (A)
  • 8fl oz sherry vinegar (A)
  • 1/2 pint jus (any you prefer) (B)
  • 1/4 pint double cream (C)

Method

make a caramel with the sugar from (A), then add the vinegar and heat until it is all smooth.add (B) and bring to the boil, then add (C), and boil until reduced to desired consistency.
