How far has the hospitality industry progressed in the journey towards net-zero?

The hospitality industry has made significant strides towards sustainability and reducing its carbon footprint, introducing sustainability initiatives, green certifications, waste reduction, local sourcing and investing in technology to optimise energy use. However, achieving a net-zero status is always a work in progress. RATIONAL have an ENERGY STAR certification for the iCombi Pro, which is one of the few globally recognised certifications for high energy efficiency, certified by independent institutes.

Both the iCombi Pro combi steamer and iVario Pro advanced bratt pan, allow chefs to cook food with unparalleled precision. This means less chance of overcooking or undercooking, resulting in a reduction in food waste. Both cooking systems enable chefs to cook in small batches, responding to real-time demand. Cooking exactly what's needed ensures that ingredients are used to their full potential, further minimising waste.

RATIONAL cooking systems are multifunctional, capable of performing a variety of cooking techniques in a single unit. Their versatility eliminates the need for multiple appliances, saving on valuable space and resources.

RATIONAL cooking systems are built to withstand the demands of commercial kitchens. Their durability ensures a longer lifespan, reducing the need for frequent replacements and thus lowering the environmental impact associated with manufacturing and disposal of appliances. Around 90% of installed components in RATIONAL cooking systems can be recycled. The packaging used for RATIONAL appliances is almost fully recyclable, cardboard and wood are almost exclusively used.

Finally, RATIONAL have made it easier to access your digital energy information with a new dashboard for digital energy usage display function. This dashboard is available exclusively in ConnectedCooking, RATIONAL’s digital kitchen management solution, and gives users an overview of the energy requirements of the iCombi Pro and its predecessor model the SelfCookingCenter, helping to identify potential savings.
