Crushed New Potato

Ingredients

  • 5kg New Potatoes
  • 10g Thyme
  • 1 Blocks of Butter
  • Salt and pepper

Method

1. Place the potatoes in a large saucepan with enough cold salted water to cover. Bring to the boil then lower the heat to just under a simmer and cook for 25-30 minutes until soft.
2. Warm the Butter with thyme in a small saucepan while the Potatoes are cook. Leave to infuse for 20 minutes pass through a Fine sieve put to one side.
3. Drain the potatoes thoroughly and leave to dry for 10 minutes, Place in a mix bowl and mix with the K beater
4. Add the infused butter Mix. Adjust the seasoning as necessary.
5. Dived in to Batches
