Duck breast marinade

Duck is very versatile and is enjoyed for its rich, tender meat which is usually roasted or part roasted in the oven to help crisp up the skin. Why not give the following marinade recipe a try? A simple way to cure your own duck breast, a recipe by Alex Standen, Resort Head Chef At THOPRE PARK

Ingredients

  • 6 duck breast
  • 1 bunch parsley
  • 2 bunch tarragon
  • 1 bunch chervil
  • 1 bunch basil
  • Dijon mustard
  • Sel rose (pink salt)
  • White pepper

Method

1)trim all the duck breast, removing the fat and the fillet
2)chop all the herbs very fine
3)season the ducks with the sel rose and pepper
4)brush with the mustard
5)roll in the herbs
6) put 2 breast together and wrap in muslin tightly
7)hang in the fridge for 10 to 14 days to cure
