WELSH RAREBIT RECIPE

nice way to top a burger instead of plain cheese or great on toast for sunday brunch

Ingredients

  • 500g grated cheddar cheese
  • 200g flour
  • 8 egg yolk
  • 625ml milk
  • 125g butter
  • 100ml beer
  • A pinch cayenne pepper
  • 1 tablespoon English mustard
  • Worchester sauce

Method

melt the butter and add the flour cook out for 4 mins
add the beer and cook out mix to a smooth paste
add the milk slowly keeping the mixture smooth
add the grated cheese keeping the mix on a low heat so as not to split the mix
finally add the cayenne, mustard and a splash of Worchester sauce
put into plastic container and chill
