Staff curry

a recipe from my goan kitchen porter, staff loved this dinner more than anything else

Ingredients

  • 1kg lamb, beef or chicken diced
  • 2 large onions, finely diced
  • 1 tin peeled tomatoes, chopped
  • 2tbsp tomato purée
  • 5 potatoes, peeled and diced
  • 1tbsp garlic paste
  • 1tbsp ginger paste
  • 5tbsp veg oil
  • 2 tbsp coriander powder
  • 2tbsp cumin powder
  • 1/2 tbsp turmeric
  • 1/2 tbsp chili powder
  • 1tbsp garam masala powder
  • Juice of ½ lemon

Method

Heat oil in medium saucepan
Add onions and fry till golden
Add all spices except garam masala and fry of 2-3 mins
Add tomatoes, salt, garlic, ginger fry for 10 mins add a little water if gets to dry
Add tomato purée and cook till sauce is dry
Add meat and cook on a medium heat, stirring occasionally until meat is cooked
Add 2-3 cups water and cook until sauce is nice thick consistency
Add potatoes and cook till tender
add garam masala and lemon juice
bring up to heat and serve
