- 70g sugar A
- 3 tablespoons earl grey tea (or 3 bags) A
- 400ml water A
- juice 1/2 lemon B

not particularly sweet, this is a nice refreshing inclusion to citrus desserts

Method
simmer A til sugar is dissolved, and the tea has infused. add B, sieve and chill.
freeze in a shallow tray. every 20 minutes, stir the mix. when it starts to freeze, scrape the frozen parts with a fork to create 'rocks' keep doing this every 20 mins until all the mix is like small rocks. place into a tub. and keep frozen.
