- 50g Butter
- 200g Onions, chopped
- 75g Pancetta, chopped
- 1 Garlic Clove, crushed
- 20g Essential Cuisine Ham Stock
- 20g Essential Cuisine Vegetable Stock
- 2 ltrs Water
- 500g Frozen Peas, defrosted
- 1 Medium Potato Chopped
- Salt and freshly ground black pepper
- 200ml Double Cream
- 100g Diced Smoked Ham
- 20g Chopped Fresh Parsley

Method
For the soup, heat the butter in a large pan, add the chopped onions, pancetta and garlic, then sweat for 10-15 minutes until the onions are tender. Add the water, the Essential Cuisine stocks and the potato, bring to the boil and skim any scum from the top. Add the peas and return to the boil simmer for 10 minutes and then purée in a liquidiser. Pass through a sieve into a clean pan, bring back to the boil add the cream and correct the seasoning. If the soup is too thick, add a little water until the desired consistency is achieved.
Finish with the chopped ham and parsley.
