glass biscuit

a glass like tuile/ biscuit.effective for presentation.

Ingredients

  • 200g melted butter
  • 360g caster sugar
  • 180g liquid glucose
  • 180g flour

Method

robo all ingredients until well combined, then rest in fridge for 30 minutes.
when ready to use, roll between 2 sheets of silicone paper until very thin.
put in an oven at 160c for 30 seconds, then roll again to get thinner.
replace into the oven, then bake for 7-9 minutes until crisp. should still be pliable to shape as you wish.
