- 16 Sliced Smoked Halibut 4 Per Person
- 4 Yorkshire Asparagus 4 Per Person
- Rapeseed Oil
- Salt
- Pepper
- Salad Leaf of your liking
- Orange Hollandaise Sauce
- 3 Egg Yolks
- 2 tsp lemon juice
- 4 tsp white wine vinegar
- 250g butter
- 2 orange, zest only and juice
- Salt and freshly ground black pepper

Glazed Smoked Halibut with Grilled Asparagus and Orange Hollandaise recipe
Halibut is the largest of all flat fish and has a mildly sweet flavour, popular in many chefs recipes. Try the following Glazed Smoked Halibut with Grilled Asparagus and Orange Hollandaise recipe for yourself!

Place yolks in a mixing bowl and whisk well
Warm the vinegar, lemon and orange juice reduce by ½ add too the yolks and whisk over
simmering water until they thicken.
Remove from heat and slowly pour in the clarified butter whilst whisking continuously.
Then stir in the orange zest and season, to taste, with salt and freshly ground black pepper.
Set aside (keep warm).
Oil and session the and riddle the asparagus until al dente then arrange on a plate with the
smoked halibut. Pour over the Hollandaise sauce and glaze with grill or blow torch. Wild
