Grilled and Confit Potatoes

Grilled and Confit Potatoes

Ingredients

  • Potatoes
  • Oil
  • Duck fat
  • Thyme
  • Garlic
  • Salt

Method

Preheat the oven to 180c
Peel the potatoes and shape them into barrels and oil the Season with salt
Place on a hot grill pan and allow to sear. Rotate slightly after about 2 minutes to get the grill markings.
Flip the potatoes on the other end and repeat.
Place in try and cover with duck fat, thyme and garlic
Place in and cook till tender
