Lemon Madeleines

Nice petit four, hard not to eat when straight from the oven!!

Ingredients

  • 300g whole egg (a)
  • 440g caster sugar (a)
  • 20g trimoline (a)
  • Zest of 4 lemons (a)
  • 35g baking powder (b)
  • 750g t55 flour (b)
  • 250ml milk (c)
  • 250 melted butter (room temp.) (d)

Method

Mix (a) well for two minutes, then fold in (b). Add (c) gradually to the mix, then (d), again gradually.
Pipe into trennwax sprayed Madeleine mould, cook @200c for 4 minutes.
Soak in a light lemon syrup for 3-4 seconds while still warm, and serve immediately.
