onion crackers

light, short biscuits great with blue cheese

Ingredients

  • 8oz plain flour (A)
  • 4oz polenta (A)
  • 2 tbsp caster (A)
  • 1/2 tsp bicarb (A)
  • 1/2 tsp salt (A)
  • 2 oz soft butter (B)
  • 14tsp water (B)
  • 2 tbsp cider vinegar (C)
  • 2oz dried onion flakes (C)
  • more onion flakes to garnish

Method

mix (A) together, add (B) and mix to a tight dough.
add (C) and mix well.
divide into 64 balls. cover with a damp cloth, roll 1 at a time, and flatten. sprinkle with onion flakes.
repeat with all balls.
bake @ 160c for 8-12 minutes.
store in an airtight tin.
