passion fruit curd

variation on the classic lemon curd, great with orange/citrus desserts.

Ingredients

  • 8 eggs
  • 8egg yolks
  • 20 tablespoons passion fruit pulp
  • 4oz unsalted butter
  • 1 cup caster sugar

Method

mix all well, then cook our in a large metal bowl over a pan of simmering water until thick and then strain and chill., covered with cling film.
