Penne Salmon

A popular choice due to its versatile flavour, salmon is a delicious addition to any recipe. Put your culinary skills to the test with the following Penne Salmon recipe. A lovely smooth tasty dish as a starter or main course with a simple salad. It is cheap to use cocktail pieces or off-cuts.

Ingredients

  • 1/2 onion finely diced
  • 120g Smoked salmon cocktail pieces
  • Brandy splash
  • butter / oil
  • 1/2 tin chopped tomatoes (simmered for 10 mins) or passata
  • 250 ml cream
  • 500g penne pasta
  • Fresh chopped parsley
  • Black pepper and salt

Method

Gently fry the onion in butter and oil until soft then add smoked salmon and cook for 2 minutes. Flame with brandy then add tomatoes. Add cream and cooked penne then finely add chopped parsley and cracked black pepper enjoy with bread and salad.
