Pommes Fondant

Fondant potatoes are potatoes trimmed in the shape of an egg which are fried in butter and stack

Ingredients

  • unsalted butter
  • Potato's
  • Stock

Method

To make the pommes fondant, line a heavy pan with unsalted butter, diced. Fit medium potatoes, trimmed to your chosen shape and in as many pieces as you want. Season, and pour on stock. Cook over a low heat, 15 minutes each side, till browned. They can be made an hour in advance to let the butter soak in.
