- 1kg new potatoes,
- 4tbsp duck fat
- 2cloves of garlic, minced
- 5 sprigs of thyme, picked
- Sea Salt
- Pepper

Method
Preheat the oven to 200°C.
In a saucepan slowly warm the duck fat until fluid.
Combine the fluid duck fat, garlic, thyme, salt and pepper into a bowl and mix.
Place the potatoes into a roasting pan and pour over the duck fat mixture.
Toss the potatoes until all are coated.
Bake for around 45 minutes to an hour, until golden brown and tender.
