Ingredients

  • 1 BOX - ROCKET, STALKS REMOVED
  • 2 LITRE - SUNFLOWER OIL

Method

BLANCH THE LEAVES IN BOILING WATER 30 SECONDS ONLY. REFRESH IN ICED WATER, COOLING IT IMMEDIATELY
SQUEEZE ALL THE WATER OUT WITH A CLOTH OR MUSLIN
BREAK THE MASS APART, AND LAY OUT ON PAPER AS THIN AS POSSIBLE, NO CLUMPS!!!!!!!! LEAVE TO DRY AT ROOM TEMP 2 DAYS, THIS JOB TAKES AGES. SO MAKE SURE ALL CHEFS ARE AROUND TO HELP YOU....
IN THE THERMO, BLITZ THE ROCKET AND THE OIL TOGETHER FOR AT LEAST 5 MINUTES, UNTIL THE OIL TAKES ON THE VIBRANT GREEN OF THE ROCKET AND THE FLAVOUR.
PASS THROUGH A SINGLE MUSLIN AND FINE CHINOIS (LEAVE TO HANG IN THE FRIDGE), DO NOT FORCE
