Scotch Lamb Consommé, Kofta, Israeli Couscous

Ingredients

  • Scotch Lamb Consommé
  • 2 Litre Lamb Stock
  • 200g Lean lamb mince
  • ¼ chopped onion
  • Leek White chopped
  • 2 carrots chopped
  • Sprig of Thyme
  • Sprig of Rosemary
  • Sprig of Tarragon
  • 6 Egg whites lightly beaten
  • Kofta
  • 250g Lean Lamb Mince
  • ½ tsp Cumin
  • 1 tsp ground coriander
  • 1 large garlic clove crushed
  • ½ tsp chopped mint
  • ½ tsp chopped coriander
  • (Cooked Israeli Couscous, Vegetable for Garnish)

Method

Scotch Lamb Consommé

Mix lamb mince, onion, leek, carrots and herbs with egg whites. Cook for 1 hour, cool completely strain stock, check seasoning.

Kofta

Mix Kofta Ingredients until all well blended. Season and roll into balls and fry until crisp and cooked through. Garnish with vegetables of choice and cooked Israeli Couscous.
