- 1 tbsp Castor Sugar
- 1 Vanilla Pod
- 3 mint Leaves
- 1 Tbls Icing Sugar

Strawberry Jus
To accompany a strawberry dessert possibly in a shot glass.
Ingredients
Method
Set aside 1/3 straw for garnish. Cut rest and place in a large bowl and set over a pan of simmering water. Sprinkle with caster sugar, vanilla and mint leaves. Clingfilm bowl and leave for 30- 40 mins. Cool + Chill for 2-3 hours. Pour into a sieve and allow to drain naturally. Sprinkle reserved straw with icing sugar and allow to bleed.
