Jean Delport executive chef of Restaurant Interlude at historic Leonardslee Lakes & Gardens was awarded a Michelin Green Star in the Michelin Guide 2024.

Restaurant Interlude is the first restaurant in West Sussex to receive this accolade.

Jean, originally from South Africa, has successfully brought his unique culinary perspective to the UK, earning Interlude a Michelin Star shortly after its opening and, in 2024 a Michelin Green Star for its sustainability efforts.

BIOGRAPHY

Jean's culinary journey began in his native South Africa, where he attended the Zevenwacht Chef School. His training provided him with a solid foundation in French and English cuisine, which he enhanced with his South African heritage to create innovative dishes. Before moving to the UK, Jean made a name for himself at Benguela on Main in Somerset West, South Africa, where his high-end cuisine began to draw attention.

The chef’s move to the UK was driven by his ambition to open a restaurant that could compete on an international level, especially aiming for Michelin recognition which he viewed as a pinnacle of culinary achievement. This opportunity came to

fruition with the help of entrepreneur Penny Streeter, who supported Jean in establishing Restaurant Interlude in 2018.

Dining concept and sustainability

Interlude is celebrated for its unique "hunter-gatherer meets farmer" dining concept, where the menu is deeply influenced by the local flora and fauna, incorporating foraged ingredients and produce grown on the estate. This philosophy not only underscores Jean’s commitment to sustainability but also allows him to showcase his creativity with dishes that reflect the natural abundance of Leonardslee Gardens.

Jean’s cooking style is marked by a blend of tradition and innovation, utilising techniques and ingredients that reflect his diverse background and the local environment. The restaurant's offerings are designed around a multi-course tasting menu that changes with the seasons, ensuring each dish represents the freshest and most flavourful ingredients available.

Under Jean's leadership, Restaurant Interlude has not only retained its Michelin Star but has also become a destination for those seeking a unique dining experience that celebrates the beauty and bounty of its estate setting.
