Culinary Congress 2018 - Introducing Justin James, Guest Chef

Joining us at the inaugural Culinary Congress in June is Executive Chef at Melbourne's Vue de Monde restaurant, giving insight into his interpretation of Modern Australian Cuisine and its unique outback larder, narrated through the eyes of a Detroit born American in Australia.


Raised outside the hills of Detroit, Michigan USA, Justin was already working in the kitchen at the age of 16, immersed in the noise, atmosphere and culture that only kitchens can create. Early on in his career, Justin was trained by two Maîtres Cuisiniers de France before travelling throughout the States to explore different styles of food and culture at some of America's best restaurants. He ended up at Eleven Madison Park where he stayed for 3 years.


Next up was a move to Australia which he made home before making his debut at Vue de Monde in 2014. Having reached Head Chef level, Justin's travels continued, with a move to Denmark to work in the highly acclaimed Noma, but he proved destined to stay in Australia, and a move back followed upon which he was appointed Executive Chef of Vue de Monde and Vue Group.


Justin will be speaking on the second day of the Congress where we'll be exploring Plant Based Cuisine, Classic & Modern French, Antipodean Fusion, Italian & Spanish Small Plates, European-Asian Fusion, Modern Indian, Japanese Soul Food and Modern Australian Cuisine.


He's one of the many great speakers and names that will be running demonstrations at our Culinary Congress 2018, running over 5th and 6th June at Hawker House, Canada Street, London. The congress is a two-day exploration of trendsetting cuisines and culinary innovation, brought to life by the world's best chefs, mixologists and innovators with a trend narrative from thefoodpeople – a first for the UK.
