Oli Marlow to cook Great British Menu dishes at three-day Rondo residency

Following his success on the 2021 series of BBC’s Great British Menu, Oli Marlow, executive chef of Simon Rogan’s Aulis London, Aulis Hong Kong & Roganic Hong Kong , will cook his full, score-topping menu at a central London residency on 24th, 25th & 26th of June. 


Taking place at Rondo, the recently opened restaurant at The Hoxton, Holborn with ex-St John chef Chris Gillard at the helm, the residency will offer guests the chance to experience the four visionary courses which landed Oli the highest score in the programme’s history in the regional heats. 

This includes his crowning Special Delivery meat course, an ode to the invention of the World Wide Web, which made it to the final banquet.

Comprised of guinea fowl breast topped with guinea fowl mousse, stuffed chicken wings, barbecued pickled maitake mushrooms, mushroom and miso ketchup, crispy potato nest, and confit egg yolk, Special Delivery was commended by judges and received a score of 10 out of 10 across the board. 

This year’s series, which saw the final banquet aired on 21st May, was themed around the best of British innovation, where Oli represented London and the South East. 

Alongside Special Delivery, Oli’s menu begins with a veg-centric starter influenced by a London underground farm - a salad of Jerusalem artichoke with Ragstone cheese puree, pickled onions and malt soil. 

Oli’s fish course, inspired by computing pioneer Ada Lovelace and the algorithm, is a lobster dish with barbecued kalettes and black garlic. 

For dessert, Oli’s dish, titled Happy As Can Be (paying homage to the invention of the tin can), brings together condensed milk cake, toffee apple, chamomile cream, and Earl Grey ice cream. 

Oli’s dishes, although unique to the competition, depict the hyper-seasonal influences and innovative cooking techniques showcased within his menus at both Aulis London (located in St Anne’s Court, Soho) and Aulis Hong Kong; Simon Rogan’s chef’s table experiences. Serving both lunch and dinner, the food will be paired with a series of hand-selected wines chosen by the Simon Rogan Group Head Sommelier Valentin Mouillard.
