Also known as Citrus ā€˜Limonimedica Pigmentata,’ they are a rare variety belonging to the Rutaceae or citrus family. Round, oval, or elongated in shape, red lemons range in size from medium to large and have a short, blunt tip on the non-stem end. The lemon’s rind is thick, textured, and semi-coarse, covered in wrinkles, sunken pores, and bumps. The peel starts off green, but as it ages, it ripens to yellow with a blush of orange-red. 

ā¤ļøFun Fact - The pigmented lemons are a hybrid of a lemon and a citron believed to be native to the Mediterranean. 

Red lemons, with their tart, sour, and sweet flavour, are traditionally used as flavour enhancers in salad dressings, sauces, syrups, oils, jams, pasta, soups, roasted vegetables and seafood dishes.
