At the age of 21, he took on the role of chef de partie at the one Michelin star Fischer’s at Baslow Hall, under the instruction of head chef Rupert Rowley.

Here John developed a passion for home grown and high-quality produce, combining his family history of farming and his love for fine dining.

To develop his skills further, he moved to London in 2009 to work with Gary Rhodes at Rhodes W1, which held a Michelin star at the time.

John then went on to work under Claude Bosi at the

two Michelin star Hibiscus (now closed), and gained further experience at Marcus Wareing at The Berkeley and Agnar Sverrisson at the one Michelin star Texture in Marble Arch.

John's House

John’s House is currently the only Michelin star restaurant within Leicestershire. It first opened in December 2014 and was awarded the star just months later. The restaurant is set inside the sixteenth century farmhouse.

Food Style

The menu at John's House changes according to the seasons. His 'home-grown' food champions British produce, with locally sourced ingredients, many of which come from the family farm. John's philosophy of 'farm to plate' is evident with the Taster Menu. Available from £70 per person, it includes dishes such as Cauliflower Dumplings with Smoked Lincolnshire Eel, Grilled Leeks and Mint and Stonehurst Suffolk Lamb with Sweetbreads, Wood Blewits, Wild Garlic and Goats Curd.
