Great British Menu 2020: Sam Buckley, North West heat
Sam Buckley is Chef-patron of Stockport’s Where the Light Gets In which opened in 2016.
He opened the 26-seater restaurant with a £25,000 start-up loan and no sign, no printed menu and no printed wine list. It was awarded a perfect 10 from Guardian reviewer Marina O’Loughlin.
He started working in kitchen's as a teenager and while at college he got a job in a kitchen with Gary Rhodes. He went on to work for what was at the time Manchester’s only Michelin-starred restaurant, Juniper, with Paul Kitching.

He has worked for Simon Rogan at L'Enclume and his travels with his band took him across Europe where he met a chef called Tanja Grandits, from whom he learnt a lot.
Sam's food focuses on sustainability, zero waste and fresh produce from his own farm.
