JAMROCK Barbadian Rum Cocktail

Head Mixologist at Studio Bar, Michal Golecki, shares the recipe for an exclusive ‘Barbados Journey’ cocktail available at K West Hotel & Spa this Spring.
‘JAMROCK’ is a cocktail as colourful as the Caribbean, named in honour of the legend himself. Bob Marley’s son, Damian Marley, won two Grammy Awards with his album ‘Welcome to Jamrock’ and K West is recreating that Marley magic using Doorly’s XO Rum, a well-aged character, double matured in Spanish oloroso sherry casks.

Ingredients

  • 25 ml Doorly’s XO Rum
  • 12.5ml MB Banana liqueur
  • 12.5ml Malibu
  • 12.5ml Mozart Chocolate liqueur
  • 3 Muddled Maraschino cherries
  • 25ml Passion fruit purée
  • Passion fruit and seeds
  • Sprig of fresh mint

Method

Step 1: Muddle the Maraschino cherries in a cocktail shaker to get the full flavour out.
Step 2: Pour the rum, MB Banana liqueur, Malibu, MB Chocolate liqueur and passion fruit purée to the shaker, along with some ice.
Step 3: Shake, shake, shake (for at least 12 seconds).
Step 4: Pour over crushed ice in your favourite glass, or a copper tin mug if you really want to drink like a local.
Step 5: Cut the passion fruit in half and use the seeds of one half and a sprig of fresh mint to garnish the drink.
Step 6: Bottoms up!
Michal’s expert tip: “To kick it up a notch, fill up the empty passion fruit half with Sambuca and flame the fruit with a lighter. Pour Sambuca on top of the cocktail as you serve.”
