- 1 good black pudding (Chef’s comment: Stornaway is my favourite)
- 1 quail egg per potion
- 1 ripe pear
- 50ml anzu
- Spiced pear puree
- 200ml Les vergers Boiron Pear puree
- 20g sugar
- Pinch of cinnamon
- Pinch of fresh nutmeg
- As required Corn flour

Ingredients
Method
• Cut the black pudding to the shape you require and pan fry in a little bit of butter
• Cut the pear into large slices, then use a cutter to cut out some little rings and dress in anzu
• Fry the quail egg
Spiced pear puree:
• Add sugar to the pan and caramelize
• Pour in the puree to caramelize too
• Bring to the boil
• Reduce by 2 thirds
• Add 1 tbsp anzu
• Pinch of corn flour and spices
• Whisk vigorously
• Season to taste
• Garnish - spoon on plate however you want
