Spiced Pear, Black Pudding recipe by chef Adam Handling

  • 1 good black pudding (Chef’s comment: Stornaway is my favourite)
  • 1 quail egg per potion
  • 1 ripe pear
  • 50ml anzu
  • Spiced pear puree
  • 200ml Les vergers Boiron Pear puree
  • 20g sugar
  • Pinch of cinnamon
  • Pinch of fresh nutmeg
  • As required Corn flour


• Cut the black pudding to the shape you require and pan fry in a little bit of butter
• Cut the pear into large slices, then use a cutter to cut out some little rings and dress in anzu
• Fry the quail egg
Spiced pear puree:
• Add sugar to the pan and caramelize
• Pour in the puree to caramelize too
• Bring to the boil
• Reduce by 2 thirds
• Add 1 tbsp anzu
• Pinch of corn flour and spices
• Whisk vigorously
• Season to taste
• Garnish - spoon on plate however you want
