aioli

quick and simple to make when in the weeds

Ingredients

  • • ½ a small clove of garlic, peeled
  • • sea salt and freshly ground black pepper
  • • 1 large egg yolk,
  • • 1 teaspoon Dijon mustard
  • • 285ml extra virgin olive oil
  • • 285ml olive oil
  • • lemon juice

Method

crush the garlic and 1 tsp salt in pestle and mortar
make a mayo with rest of ingredients
add garlic paste
season to taste
