Duck or goose sausages

Duck is very versatile and is enjoyed for its rich, tender meat which is usually roasted or part roasted in the oven to help crisp up the skin. Why not give the following duck sausages recipe a try? Or alternatively, try with goose! Grouse is a rich and delicious meat, so it's no wonder grouse recipes are so varied in style and flavour. Duck or goose sausages recipe by Jon Wellington

Ingredients

  • 1.5kg duck meat or goose meat
  • 500g pork fat
  • 240ml red wine
  • 1 teaspoon Chinese five spice powder
  • 2 tablespoons chopped fresh sage
  • 2 teaspoons ground juniper berries
  • 2 teaspoons caraway seed
  • 1 tablespoon ground black pepper
  • 34 grams salt
  • hog casings

Method

put the meat and fat through course die on mincer
mix all the drie ingredients with the wine and marinate the minced meat for 2-3 hours
stuff the sausage casing and hang in cold room overnight to firm up before use.
