Duck or goose sausages
Duck is very versatile and is enjoyed for its rich, tender meat which is usually roasted or part roasted in the oven to help crisp up the skin. Why not give the following duck sausages recipe a try? mix all the drie ingredients with the wine and marinate the minced meat for 2-3 hours
stuff the sausage casing and hang in cold room overnight to firm up before use.
