Orange curd

Can adapt for lemon or lime curd also

Ingredients

  • 4 oranges
  • 4 oz butter
  • 8 oz sugar
  • 2 eggs

Method

Zest the oranges
Squeeze the juice from them - 150ml is needed
Put zest, juice, butter and sugar in Bain Marie
Whisk until sugar and butter have melted
Once melted - lower heat and whisk in beaten eggs and stir until thickened
