amaretti biscuits

classic biscuits for with coffee

Ingredients

  • 2 egg whites (A)
  • 4 tsp amaretto (A)
  • 390g ground almonds (B)
  • 500g icing sugar (B)

Method

mix (A). mix (B) add (B) to (A) and mix to a paste. (add more almonds or amaretto to adjust, if needed). roll to a log.
cut paste log into 2 batches, then each batch into 36. roll into balls and lay on a silpat lined baking tray. cook @180C for 15-20 minutes until golden brown.
dust with a little more icing sugar while still hot.
