avocado sorbet

a semi savoury sorbet, we served it last summer with chilled tomato presse and crab salad, would also be great with gaspacho

Ingredients

  • 2 haas avocados, ripe but not bruised (A)
  • juice of 1+1/2 limes (A)
  • 4 tablespoons sorbet syrup (A)
  • 2 cups water (A)
  • 1/2 cup coriander leaves (A)
  • salt, cayenne pepper (B)

Method

puree all (A) ingredients, sieve and season with (B).
chill for 5 minutes, then stir before churning
