carrot cake

Whisk oil and sugar and 2 yolks and 2 whole eggs
add nuts, carrot and water
fold in dry goods,

Ingredients

  • 300g s/r flour,
  • 1/4 tspn baking powder,
  • 1/4tspn bicarb,
  • 4 eggs separated,
  • 335g sunflower oil,
  • 225g caster sugar,
  • 200g grated carrot, 2
  • tbspn hot water,
  • 140g walnuts,
  • 12 juniper berries,
  • 1/3 grated nut meg,
  • 1tspn ground ginger

Method

Whisk oil and sugar and 2 yolks and 2 whole eggs
add nuts, carrot and water
fold in dry goods,
whisk 2 whites and fold into mix,
bake at 170oc until cooked by inserting skewer or knife when comes out clean,
