Method
place 2 cups of water, lemon zest, vanilla and sugar in a small saucepan, over medium heat, until thick and reduced. Remove vanilla pod. Set aside sugar syrup.
Place rhubarb and 1/2 cup sugar syrup into a small saucepan over medium heat. Simmer until rhubarb is soft. Remove from the heat and allow to cool completely.
