Cheddar cookies

Crumbly biscuit, nice canapé, with a little goats cheese mousse.

Ingredients

  • 460g grated cheddar(a)
  • 500g soft butter(a)
  • 3tsp salt(b)
  • 3/4 tsp cayenne pepper(b)
  • 600g soft flour(b)

Method

Mix (a) together, then sieve and slowly add (b) to make a soft dough.
Roll into logs, and chill.
For an extra texture, pane the logs before slicing, and baking at 160C for 6-8 minutes.
