Cod Brandade

Cod is a fantastically flaky fish that offers the versatility to be paired with a range of delicious flavours - Why not give the cod brandade recipe a try yourself?

Ingredients

  • 1.5kg salt cod
  • 4 gelatine
  • 1lt d.cream
  • 400g pommes puree

Method

cook salt cod in water bath for 56oc for 15 minutes remove and puree in thermo mix, slowly adding double cream, remove some mixture add soaked gelatine and mix in the potato and pass and add in gelatine mix check for seasoning.
