lemon curd

lemon curd using agar

Ingredients

  • 100g diced butter
  • 3 whole egss whisked
  • 250g sugar
  • 2.5g agar
  • 3 whole lemons juice/zest

Method

whisk sugar with agar, add zest and juice slowly heat up add butter and whisk in, add eggs and slow stir to 90oc quickly remove and pass through sieve
