Method
Bring lemon juice and zest to the boil 100* C
Mix together eggs and sugar
Whisk on to lemon the lemon juice
Cook the mixture out
Remove from the heat and beat in the butter
Soak the gelatine in water and then beat in to the curd
Pass through sieve
